When Life Gives you Squash...


Make a cake?


Yes. Yummy.


Squash Cake

4 eggs

1 1/2 cups oil

1 cup honey

1/2 cup sugar

2 cups grated raw squash

2 cups whole wheat or white flour

2 tps baking powder

1 1/2 tps baking soda

1 tp salt

2 tps cinnamon

1 8-oz can pineapple, well drained (I just cut up some fresh)

1/2 cup nuts (I used pecans)


Place eggs, oil, honey, and sugar in blender, in that order, and blen until smooth. Add the squash, a little at a time. Pour into a large mixing bowl, add all dry ingredients and stir well. Fold in nuts and pineapple. Pour into 3 greased round cake pans. Bake at 350 for 35-40 minutes until done (it only took my stove 25-30 minutes).


I made a cream cheese icing (1/4 cup butter, 1 pkg cr cheese, 2 cups confec. sugar) for the top and had lots left over--I had forgotten to icing between the layers!! Duh!


Delish, tho!


Tomorrow is my honey's and my anniversary, so this was our anniversary cake! :)
